My kids love my matzah brei and they only get it the week of Passover. It’s as close to French Toast as I can get it and we LOVE French Toast! Here’s the recipe.
Matzah Brei
1 cup milk
4 eggs
1 teaspoon vanilla
1/2 teaspoon salt
1/2 teaspoon cinnamon
Enough matzah squares
Combine everything but the matzah. Now crumble and add broken matzah until you’ve filled up the liquid. (Six to 8 squares). Let it sit about 5 minutes to absorb the liquid. Heat a pan, spray with some oil. Pour in the matzah and stir as it cooks.
Serve hot with syrup and/or jam.
